Recipe for Black Beans and Corn Salad
It doesn't get more satisfying than this....black beans combined with sweet corn, ripe avocado, juicy tomatoes, and sweet vidalia with a few key ingredients. Around these parts this dish doesn't last too long since some eat it as their main course (no shame)! ________________________________________________________________________
1 can rinsed black beans
1 ripe avocado, cubed
1 ripe tomato, cubed
1/2 medium vidalia onion (red onion may be substituted), cubed
Juice of 1/2 to a whole lime
Splash of apple cider vinegar
2 teaspoons olive oil or to taste (you can substitute with any oil that you prefer)
1 teaspoon chopped cilantro (if desired)
1/2 teaspoon oregano (if desired)
1/4 teaspoon cumin (if desired)
1/4 teaspoon garlic powder
Dash of cayenne
Salt and pepper to taste

Combine ingredients. Let sit for 10-15 minutes to allow flavors to meld. Refrigerate after serving. Enjoy!
