Pan Fried Tofu that's super easy and delicious
If you didn't grow up eating tofu it can be intimidating. Over the years we've tried an assortment of recipes but never really had that "yum" moment, until now...
Now we serve our pan fried tofu as a delicious after school snack, or over a bowl of rice and beans. As a super lean protein with little to no carbohydrates, pan frying the tofu is key, since it infuses the tofu with some fat. Don't skimp on the oil, which is key to the texture.
Ingredients:
1 package of Tofu, drained and pressed (see below for press instructions)
1-2 tablespoons of adobe sauce from can of Chipotle Peppers (optional)
2 tablespoons Cornstarch
2 Tablespoons Easy Beansy Spice Mix
3-4 Tablespoons of Vegetable oil for frying
Using your hands, rip the tofu into bite size "tender" pieces ala nuggets. Or, if you prefer more structure, cut the tofu into sizes or shapes that are desirable to you.
Sprinkle the adobe sauce over the tofu pieces and gently stir.
Combine the cornstarch and Easy Beansy spice mix. Sprinkle over the tofu pieces and gently toss to cover all of the pieces.
In a non stick frying pan, heat 3-4 tablespoons of vegetable oil over medium-high heat.
Add the tofu and cook for 4-5 minutes on each side until golden and crispy. Do not flip, stir or move the tofu until each side is at the desired color. Continue to fry all other sides.
Serve over Easy Beansy rice and beans, or on its own with a side of honey mustard sauce.
To press the tofu:
Fold two clean towels in quarters.
In the morning, set the block of tofu on one towel and cover with another. Place a weighted plate over the block of tofu and let sit. The towel will absorb the liquid.
