Avocado and Bean Toast

Avocado toast just got a little healthier and more satisfying with the addition of black beans. Try these in the morning or afternoon for a meal full of flavor as well as healthy protein and fat.

Avocado and Bean Toast 

- Toast of your choice (we love a nice ciabatta or artisanal toscano from North Shore Farms market on Long Island)

- 1/2 Avocado

- Extra Virgin Olive Oil

- Lime juice 

- Salt 

- 4-6 cherry tomatoes, halved (optional)

- 1/2 cup prepared Easy Beansy Original Beans 

Lightly toast two 1/2 inch slices of bread until lightly golden. Heat the beans in the microwave for 1 minute or over medium heat on the stove.

In a small bowl combine and mash the avocado and lime. Spread half of the mixture on each slice of toasted bread and then top with the halved tomatoes and warmed beans. Drizzle some extra virgin olive oil over the beans and sprinkle with some salt flakes to taste on top. Enjoy!
